- Prepare the vegetables for canning. Select fresh, ripe vegetables that are free of blemishes, dents or bruises. Wash, remove peel and seeds (if necessary) and cut the vegetables into 2 inch (5 cm) segments, slices or cubes.
- Clean 7 glass quart (946mL) canning jars and metal lids with soap and hot water. Keep the jars and lids hot until they are ready to be filled.
- Combine all the vegetables in a large pot, add enough water to cover pieces and boil for 5 minutes. Pack the clean jars with the vegetables and cooking liquid, leaving 1 inch (2.5 cm) of space at the top of the jars.
- Wipe the rims of the jars with a clean cloth, stir gently to allow air bubbles to escape and cover with the metal lids. Place the sealed jars on the rack in the pressure canner filled with 3 quarts (2.8 L) of hot water.
- Place the cover securely on the canner and heat water to boiling. Allow steam to vent from the canner for 10 minutes before adding canner weights or closing vents.
